  • 1 lemongrass stalk, white parts only, thinly sliced
  • 2 to 3 thin slices peeled ginger, chopped
  • 4 candlenuts (or macadamia nuts), optional
  • 2 to 4 medium tomatoes, hulled and quartered
  • 2 red finger chiles, deseeded and chopped
  • 2 Thai chiles, sliced (more if you like it spicier)
  • 2 teaspoons kosher salt (such as Diamond Crystal)
  • 2 teaspoons sugar
  • Juice from 1 lime
