Vegan Cauliflower Chickpea Tikka Masala
Ingredients
  • 1 cup raw cashews, soaked in water 4 to 8 hours and drained
  • 1 (14 ounce) can diced tomatoes
  • 1 cup water, divided, plus more as needed
  • 1 tablespoon lemon juice
  • 4 garlic cloves
  • 2 teaspoons freshly grated ginger
  • 1 to 3 teaspoons sambal oelek, to taste
  • 1 tablespoon garam masala
  • 2 teaspoon ground cumin
  • 2 teaspoons sweet paprika
  • 1 teaspoon ground coriander
  • ½ teaspoon ground cardamom
  • ¼ teaspoon nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon black pepper
  • 1 tablespoon canola oil (or neutral oil of choice)
  • 1 medium onion, diced
  • 1 large cauliflower crown, broken into florets
  • 1 (14 ounce) can chickpeas, drained and rinsed
  • 1 tablespoon brown sugar
  • 1 teaspoon salt, or to taste
  • ¼ cup finely chopped fresh cilantro
  • Cooked basmati rice, to serve
