Layered Gyros Salad

Ingredients
  • subheading: Gyros chicken:
  • 15ml oil for frying (abou 1 tablespoon)
  • 400g chicken breasts, sliced into bite-sized pieces
  • gyros spice mix, to taste (about 15g)
  •

  • 60g mayonnaise
  • 60g no-sugar added ketchup
  •  
  • subheading: Salad:
  • 60g shallot, chopped
  • 100g green pepper, chopped
  • 180g gherkins, chopped
  • 320g  napa cabbage, thinly sliced
Steps
  1. Slice chicken into bite-sized pieces and season with gyros spice mix. Leave to rest at least for 20 minutes or overnight.
  2. Heat oil in a pan over medium heat. Add chicken pieces and fry for 5 minutes or until cooked through and crispy. Leave to cool.
  3. While the chicken is cooling chop your vegetable in even sized pieces and slice cabbage on mandolin.
  4. Arrange layers of cooked chicken, shallots, ketchup, gherkins, green pepper, mayo, salt and pepper to taste and sliced cabbage.
  5. Chill before serving.

  • 1 portion: 312 kcal, 5.5g carbs, 17.3g fat, 33g protein
  • I use a "Kebab-gyros" spise from polish shop
  • I use Polish style pickled cucumber - only 1.4g carbs per 100g.
  • Traditionally you would add sweetcorn to it as well, it can be added for non-keto portion
