Classic Cajun Dirty Rice

Ingredients
  • 1 tbsp bacon grease
  • 1 cup chopped onion
  • ½ C chopped celery
  • ½ C  chopped green bell pepper
  • 2 garlic gloves minced
  • 1 lb Italian sausage ground
  • ½ lb chicken liver finely chopped
  • 1 tsp cumin
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 Tbsp Cajun seasoning
  • 3 cups cooked rice
  • ¼ C  chopped parsley
Steps
  1. Add bacon grease to skillet over med high heat, when hot add onions, celery and green pepper. Cook and stir for about 5 mins or until vegetables are done.
  2. Add garlic, sausage, and chicken livers. Break up sausage and add the cumin, salt, pepper, and Cajun seasoning.  Cook until sausage is brown with no pink.
  3. Add hot cooked rice and parsley to meat mixture and combine. Garnish with parsley and serve hot.
Notes
  • Left over dirty rice last for 4 days in the fridge.
  • Andouille, chorizo or kielbasa can be substituted.
  • Can use cauliflower rice as substitute
