Cornbread Cowboy Casserole
Ingredients
  • ¼ cup, plus 2 Tbsp. vegetable oil, divided
  • 1 lb. 90/10 lean ground beef
  • 1 medium-size (8 oz.) yellow onion, chopped (1 ½ cups)
  • 1 ¾ tsp. kosher salt
  • ½ tsp. black pepper
  • 3 Tbsp. tomato paste
  • 1 Tbsp. minced garlic (from 3 large garlic cloves)
  • 2 tsp. chili powder
  • ¾ tsp. ground cumin
  • 2 cups chicken stock
  • 1 (15-oz.) can black beans, drained and rinsed
  • 1 ( 14.5-oz.) can diced tomatoes, undrained
  • 1 cup frozen corn (from 1 [10-oz.] pkg.)
  • 2 cups self-rising cornmeal mix (such as Martha White)
  • 1 ⅓ cups whole milk
  • 1 large egg, lightly beaten
  • 8 oz. pepper Jack cheese, shredded (about 2 cups)
