Keto Chicken in a Creamy Mushroom & Bacon Sauce

Ingredients
  • 2 Tbs butter, melted
  • 2 chicken breasts(120g each, raw weight)
  • 1 clove garlic
  • 10 mushrooms (160g) cut into quarters
  • ¼ cup of cream
  • ½ cup grated Cheese
  • 100g bacon, diced
  • 140g mixed salad leaves (about 4 cups)
Steps
  1. Preheat oven to 180C. Put the melted butter into the baking dish, add the chicken, and season both sides with garlic.
  2. Place the bacon on top of the chicken and the mushrooms around it. Bake for 45 minutes or until cooked through but not dry.
  3. Remove the cooked chicken, bacon, and mushrooms from the baking dish.
  4. Using the juices from the baking dish whisk in the ¼ cup of cream with the ½ cup grated Cheese stir until cheese melts, pour it over the chicken.
  5. Serve with the salad leaves or cooked green beans.
