Rachel and Donovan's Chili

Ingredients
  • 2 TBS Olive Oil
  • 1 large onion - chopped
  • 1 bell pepper - chopped
  • 1 jalapeno - chopped (or 1 small can diced jalapenos)
  • 6 cloves garlic - chopped
  • 2 lb ground beef
  • 3 cans of beans - drained (mix and match red, kidney, pinto, black, other)
  • 2 cans Ro*Tel (not drained)
  • 1 can diced tomatoes (not drained)
  • 2 cans tomato sauce
  • ½ can tomato paste or ketchup
  • ½ cup beef broth
  •  
  • 1 TBS salt
  • 1 TBS cumin
  • 1 TBS oregano
  • 1 TBS black pepper
  • 1 TBS paprika
  • 1 TBS chili powder
  • 1 TBS fennel seed
  • 1 TBS celery salt
  • 1 TBS basil
  •  
  • Any other stuff you want to throw in there (carrots, spicy sausage, sweet potatoes, chicken, etc.)
Steps
  1. Heat oil in sauce pan or instapot
  2. Add onion and pepper, sauté for 5 minutes
  3. Add garlic, sauté one minute
  4. Add ground beef. Cook until no longer pink. Add all spices while meat is cooking.
  5. Add drained beans, all tomato and sauce cans, and stir to mix. Add the beef broth if you feel you need to thin it out.
