Instant Pot Texas-Style Chili
Ingredients
  • 3 pounds Certified Angus Beef ® chuck roast, cut in 2-inch cubes
  • 1 ½ teaspoons kosher or sea salt, divided
  • 1 tablespoon vegetable oil
  • 1 large onion, diced
  • 3 cloves garlic, crushed
  • 1 jalapeño, seeded and minced
  • ⅓ cup chili powder
  • 1 tablespoon cumin
  • 1 teaspoon oregano
  • 1 minced chipotle in adobo, with sauce (or another minced jalapeño)
  • 1 cup beer or beef broth
  • 1 (15-ounce) can crushed tomatoes
  • Juice of 1 lime
  • 2 ounces tortilla chips, crushed (about 20 chips, optional), finely crushed
  • ½ teaspoon fresh ground black pepper
  • Optional toppings: sour cream, diced onions, pickled jalapeños, fresh cilantro
