Autumn Roasted Vegetable Medley
Ingredients
  • ½ lb. Brussel Sprouts
  • 1 to 2 Delicata Squash
  • 1 head Cauliflower
  • 1 bunch Kale (I used Lacinato), shredded thinly
  • ¼ cup Pecans
  • ¼ cup Dried Cranberries
  • 2 cloves Garlic, minced
  • 2 Tbsp. Balsamic Vinegar
  • ½ Tbsp. Honey
  • ¼ to ⅓ cup Olive Oil
  • Salt and Pepper, to taste
  • Garlic Powder
  • Fresh Thyme, Rosemary, or Parsley, chopped (optional)
