  • 1 (9-ounce) package frozen artichoke hearts, thawed and roughly chopped
  • 1 clove garlic, finely grated
  • 2 oz. Parmesan, grated (about ¾ cup)
  • 1 oz. Gruyère, coarsely grated (about ½ cup)
  • 2 tbsp. sour cream
  • 1 tsp. finely grated lemon zest plus 1 tablespoon lemon juice
  • Kosher salt
  • Pepper
  • 2 tbsp. panko
  • ¼ c. flat-leaf parsley, chopped
  • 1 (5-ounce) package baby arugula
  • 2 tbsp. olive oil
