Instant Pot Colcannon with Bacon
Ingredients
  • 3 lb Russet potatoes, peeled and cut into 1 ½" chunks
  • 5 slices bacon, chopped
  • 3 cups cabbage or kale
  • ½ cup butter (one stick) + more to garnish
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ C-⅔ C whole milk or cream, heated
  • garnish with bacon, green onions, and butter
