Ingredients
  • subheading: For the tomato sauce:
  • 10 garlic cloves, peeled
  • 1½ tsp salt, plus extra for the garlic
  • 120ml olive oil
  • 6 x 400g tins of plum tomatoes
  • A big pinch of black pepper
  • 2 tsp sugar
  • 1 tsp red wine vinegar
  • A bunch of basil, leaves picked and torn
  • 1 red chilli (optional), sliced into rounds (deseeded for less heat)
  • subheading: For the patatas bravas:
  • 3 maris piper potatoes, cut into about 2cm cubes
  • 1 tbsp salt, for the cooking water
  • 4 tbsp olive oil
  • 100g spicy chorizo, peeled, and cut into nice, chunky chunks
  • 1 tsp smoked paprika
  • 1 tsp sweet paprika
  • 3 to 4 tbsp tomato sauce
  • 50ml chicken or vegetable stock
