Ingredients
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 1 red bell pepper, diced
- 1 pound lean ground beef
- 4 cloves garlic, minced
- 28 ounces fire roasted crushed tomatoes
- 2 cups low sodium beef broth, or low sodium chicken broth
- ½ cup water
- 7 ounce can mild diced green chiles, with liquid from the can
- 15 ounce can black beans, rinsed and drained
- 15 ounce can red kidney beans, rinsed and drained
- 15 ounce can corn, drained, or 1 ½ cups frozen corn
- 1 tablespoon chili powder
- 2 teaspoons ground cumin
- 1 teaspoon sweet paprika
- 1 teaspoon dried oregano
- ½ teaspoon salt
- Optional toppings for serving, such as: shredded cheese, sour cream, diced avocado, crumbled tortilla chips, chopped fresh cilantro, chopped red or green onion, etc.
