Winter Minestrone with Cabbage Pesto
Ingredients
  • ½ cup plus ⅓ cup extra-virgin olive oil
  • 4 celery stalks, diced
  • 2 medium carrots, peeled and diced
  • 1 large yellow onion, peeled and diced
  • 1 tablespoon minced fresh rosemary
  • Fine sea salt and freshly ground black pepper
  • 5 garlic cloves, minced, plus 1 extra minced clove for the pesto
  • 1 (14-ounce) can diced tomatoes, drained
  • ½ savoy cabbage, cut into quarters, cored, then thinly sliced crosswise
  • 2¼ cups chicken or vegetable stock
  • ½ cup orzo (or similar pasta)
  • 5 cups baby spinach
  • 1 (14-ounce) can black beans, rinsed under cold water
  • 1 lightly packed cup fresh parsley leaves
  • 3 tablespoons pine nuts
