Blueberry, Fruit, Nut, (Or Anything You Want) Whole Wheat Muffins

  • 1 ½ cups whole-wheat flour (I used King Arthur’s white whole-wheat flour)
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • ½ teaspoon cinnamon
  • ⅛ teaspoon nutmeg
  • 2 eggs
  • 2 tablespoons honey
  • 1 teaspoon pure vanilla extract
  • ¼ cup coconut oil (or other oil of your choice)
  • ¾ cup apple juice (or orange juice)
