Ingredients
  • 1 large zucchini to yield 1 cup of shreds

  • 2 Tablespoons sugar
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ teaspoon ground cinnamon
  • 1 egg beaten
  • ¼ cup non-fat Greek yogurt
  • ¼ cup Optional: raisins, dried cranberries, walnuts, or chocolate chips
