4 tablespoons (57g) unsalted butter

½ cup (107g) mashed potatoes

2 large egg yolks

Filling

6 tablespoons (85g) unsalted butter, softened

⅓ cup (66g) granulated sugar

6 ounces ham, diced

Topping

⅓ cup (104g) sweetened condensed milk

1 cup (113g) shredded queso de bola*

1 salted red egg*
