Soto Kediri / Indonesia Traditional Herbed Chicken Soup from Kediri
Ingredients
  • 1 medium-size chicken, cut into 8
  • 5 tbsp cooking oil
  • 8 garlic
  • 10 shallots (150 gr)
  • 5 candlenuts, stir fry without oil until fragrant and starts to brown
  • 1 tsp shrimp paste (terasi), pan fry with very little oil until fragrant
  • 1 thumb ginger
  • 20 gr peeled aromatic ginger (kencur)
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • 2 thumbs galangal, slice into 6
  • 2 lemongrass, take the white part and crush
  • 5 salam or bay leaves
  • 8 lime leaves
  • 2 L water
  • 2 tbsp salt, or to taste
  • 1 tbsp sugar
  • 1 tsp pepper, or to taste
  • 100 ml UHT coconut milk
  • 3 tbsp fried shallots
  • 2 tbsp fried garlic
  • 10 scallions or green onions, minced
  • cooked bean sprouts
  • bean vermicelli, soak in cold water until soften, then cook in boiling water for about 30 seconds or just until soft
  • 2 tomatoes, cut each into 8
  • freshly squeeze lime juice
