Butter Tart Muffins

Ingredients
  • 1 ½ cups raisins
  • ¾ cup sugar
  • ½ cup butter
  • 2 eggs lightly beaten
  • ¾ cup milk
  • 1 tsp vanilla
  • 1 ½ cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • Pinch of salt
Steps
  1. In large saucepan over medium heat add raisins, sugar, butter, eggs, milk and vanilla. Cook, stirring, almost constantly, until mixture is hot, slightly thickened & just beginning to bubble, approximately 4 to 5 minutes.
  2. Let this cool while making the rest of the recipe.
  3. Preheat oven to 375F. Line muffin tins.
  4. Using a fork, stir together flour, baking powder, soda and salt in a large bowl.
  5. Make a well in the centre and pour in the warm raisin mixture. Mix well.
  6. Spoon into muffin cups and bake 12 to 15 minutes.
  7. Remove from oven & immediately drizzle about 1 tsp corn syrup over each muffin.
Notes
  • You can add ½ cup walnuts or pecans
