I love serving these delicious crispy and light Tomato Basil Risotto Fritters stuffed with cheese; they are deep fried with cheese oozing out with every bite. It is a great appetizer that is paired next to any kind tasty dipping sauce. Even the kids will enjoy these.
Ingredients

  • 7 cups chicken broth
  • 1 8-ounce can tomato sauce
  • 2 tablespoons unsalted butter
  • ¼ cup olive oil
  • ½ cup finely chopped onion
  • 2 cups arborio rice
  • 2 tablespoons minced garlic
  • 1 ½ cups grated Parmesan cheese (about 6 ounces)
  • ½ cup grated cheddar cheese (about 2 ounces)
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon dried crushed hot red pepper
  • 8 ounces cooked, peeled and deveined shrimp (optional)
  • ½ cup fresh basil, finely chopped
  • 3 cups panko (Japanese breadcrumbs), divided
  • 12 ounces (about) whole-milk mozzarella cheese, cut into ½-inch cubes (see note)
  • Canola oil for deep-frying
