  • 3 ounces fresh shiitake mushrooms, chopped
  • 1 tablespoon minced garlic
  • 1 teaspoon fresh thyme leaves
  • 1 (6-oz.) pkg. fresh spinach
  • 2 tablespoons chopped fresh flat-leaf parsley
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon black pepper
