Creole Shrimp and Okra Stew
Ingredients
  • 2 to 3 pounds medium shrimp, with heads if possible
  • 3 quarts water
  • ½ cup vegetable oil
  • 5 pounds fresh okra, thinly sliced
  • 3 medium onions, finely chopped
  • 3 medium bell peppers, finely chopped
  • 2 celery ribs, thinly sliced
  • 6 to 8 medium ripe tomatoes, peeled, coarsely chopped (or two 15-ounce cans whole peeled tomatoes)
  • 1 teaspoon white vinegar
  • 1 teaspoon cayenne
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon ground white pepper
  • 4 or 5 good shots Tabasco sauce
  • Salt
  • ½ cup chopped green onions
  • ½ cup chopped parsley
  • 2 tablespoons dark roux
  • Cooked white rice for serving
