Shrimp Thai Style Shrimp Fried Rice
Ingredients

  • 300g long grain rice
  • 350g shrimp
  • 3 eggs
  • 1 onion
  • 3 cloves of garlic
  • 1 green pepper
  • 2 carrots
  • 2 green onions
  • Parsley
  • 4 tbsp soy sauce
  • 6 tbsp vegetable oil
  • Salt, pepper, ginger

  • Cook rice according to package instructions, then set aside to cool.
  • Peel and devein shrimp, season with salt, pepper, and ginger.
  • Heat 2 tbsp of oil in a wok or large skillet over high heat.
  • Add shrimp and cook until pink and cooked through, then remove from skillet and set aside.
  • In the same skillet, heat remaining oil. Add minced garlic, chopped onion, diced green pepper, and sliced carrots. Cook until vegetables are tender.
  • Push vegetables to one side of the skillet, then crack eggs into the empty space. Scramble eggs until cooked.
  • Add cooked rice and shrimp back to the skillet. Stir to combine with vegetables and eggs.
  • Pour soy sauce over the mixture, stirring continuously until everything is well coated.
  • Add chopped green onions and parsley, then stir fry for another minute.
  • Serve hot and enjoy your delicious Thai-style shrimp fried rice!
