  • 3 ½ cups all-purpose flour, divided use (470 grams)
  • ¼ teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup cottage cheese, not too cold (microwave for 10 sec)
  • 1 large egg, room temperature** (60 grams)
  • 2 tablespoons olive oil or use half oil and half butter (28 grams)
