Creamy One-Pot Mushroom and Leek Pasta
Ingredients
  • 3 T olive oil
  • 5 small leeks, white part only, finely sliced (about 10 oz)
  • 3 garlic cloves, finely chopped
  • 3 C mixed mushrooms, such as cremini, shiitake or oyster, torn or sliced (about 16 oz)
  • 1 lemon, zested and halved
  • 1 lb short pasta, such as orecchiette, cavatappi, gemelli or penne
  • 4 C vegetable stock
  • 2 T unsalted butter
  • ½ C chopped fresh parsley, or 1 T dried basil and 1 T dried parsley
  • Kosher salt and black pepper
  • 1 C ricotta
  • ½ to 1 tsp red pepper flakes
  • Spinach (optional)
