Ingredients
- 2 tbsp oil
- 1kg whole brisket
- 1 large onion, finely chopped
- 2 garlic cloves, crushed
- 2 to 3 medium carrots, cut into 4cm chunks
- 2 parsnips, cut into 4cm chunks
- 1 large potato, cut into quarters
- 250g leeks, thickly sliced
- 2 tbsp tomato puree
- 1 tsp mustard powder
- 500ml brown ale or IPA
- 200ml beef stock, made with ½ beef stock cube
- 2 large bay leaves
- 2 tsp mixed herbs
- Salt and freshly ground pepper, as desired
