Beef Pot Roast in Beer –
Ingredients
  • 2 tbsp oil
  • 1kg whole brisket
  • 1 large onion, finely chopped
  • 2 garlic cloves, crushed
  • 2 to 3 medium carrots, cut into 4cm chunks
  • 2 parsnips, cut into 4cm chunks
  • 1 large potato, cut into quarters
  • 250g leeks, thickly sliced
  • 2 tbsp tomato puree
  • 1 tsp mustard powder
  • 500ml brown ale or IPA
  • 200ml beef stock, made with ½ beef stock cube
  • 2 large bay leaves
  • 2 tsp mixed herbs
  • Salt and freshly ground pepper, as desired
