Easy Instant Pot Jambalya
using left over smoked chicken & sausage
Ingredients
  • 1 lb smoked sausage, sliced
  • 2 smoked boneless skinless chicken breast, diced
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 medium bell pepper, diced
  • 2 stalks celery, sliced
  • 1 tsp dried thyme
  • ½ tsp salt
  • ½ tbsp minced garlic
  • ½ to 1 tbsp Tony Chacheres (depending on taste)
  • 2 bay leaves
  • 1 tsp Worcestershire sauce
  • 1 can Hunts fire roasted diced tomatoes
  • 2 cups chicken broth
  • 1 ½ cups rice
  • green onions, sliced, for garnish

Steps
  1. Slice sausage & dice chicken.
  2. Add olive oil to Instant Pot. Set to sauté.
  3. When hot, add onions, bell pepper, celery, garlic, bay leaves and all of the seasonings.
  4. Sauté until vegetables are tender. Be careful not to burn garlic or break up the bay leaves.
  5. Add in the sliced sausage and sauté a 2 to 3 minutes more.
  6. Hit Cancel. Add a splash of chicken broth and deglaze pot, if needed, making sure there is nothing stuck to the bottom of the pot.
  7. Add in the broth & Worcestershire sauce and stir.
  8. Add the can of tomatoes, do NOT stir.
  9. Add the rice on top and press down gently to submerge in broth, do NOT stir.
  10. Make sure seal is in lid, cover and set to high pressure for 7 minutes and QR when finished.
  11. Remove bay leaves.
  12. Give everything a good stir and serve garnished with green onions.
