Roasted vegetable soup
Ingredients
  • 1 cauliflower
  • 1 broccoli
  • ½ pumpkin
  • 1 onion
  • 1 tsp garlic
  • 1 tsp grated ginger
  • ½ to 1 tsp all spice (cinnamon, cloves, nutmeg)
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 2 cups vegetable broth
  • Pepper to taste
  • 1 can coconut milk
  • Bag spinach
Steps
  1. Roast the cauliflower, broccoli and pumpkin for about 30 minutes in a 200C oven.
  2. Add roasted vegetables, spices, coconut milk and vegetable broth to a soup pot and simmer for 15 minutes.
  3. Add spinach, mix and simmer 5 minutes.
  4. Blend all ingredients until smooth.
