Intoxicatingly Tropical Coconut Chicken Salad:
Coconut oil is a great way to get the flavor without any sugar or carbs. I just created and taste tested (for today's OMAD), this chicken-coconut oil based salad. I also created cheesy garlic zoodles!
Ingredients
  • 8 Ounces chopped chicken (I used rotisserie)
  • 1 stalk celery diced
  • 1 green onion sliced thin
  • ⅛ yellow onion diced very small
  • 4 TBSP. coconut oil (I use organic)
  • 1 TSP. balsamic vinegar
  • 1 TSP. red wine vinegar
  • 1 TBSP Mayo
  • 3 TBSP. Greek yogurt
  • 1 TBSP. of fresh milled mixed peppercorn
