Chicken and Apricot Masala
Ingredients

  • 3 pounds boneless, skinless chicken thighs, diced
  • 4 medium tomatoes, cut into ½-inch dice
  • 2 tablespoons tomato paste, diluted in ½ cup water
  • 3 tablespoons chopped cilantro leaves
