Spring Frittata with Asparagus, Peas and Mushrooms
Ingredients
  • 5 eggs
  • ½ cup milk
  • 1 shallot finely chopped
  • 1 grated garlic clove
  • 6 to 8 small chopped asparagus
  • 5 to 6 shitake mushrooms roughly chopped
  • ½ cup peas
  • 2 tbsp chopped rosemary
  • 1 tbsp chopped thyme
  • 1 tsp red pepper flakes
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 cup mix of swiss and gruyere cheese
  • salt & pepper
  • subheading: Garnish:
  • 1 tbsp of mix of chopped rosemary and thyme
