Roasted Maple Salmon with Sweet Potatoes onions and Brussels Sprouts or broccoli
Ingredients
  • ¼ cup maple syrup
  • 1 tablespoon Dijon mustard
  • 2 tablespoons low sodium soy sauce
  • 4 (6-ounce) salmon fillets, skin removed
  • 2 tablespoons olive oil
  • 2 pounds of sweet potatoes, peeled and sliced in ½″ slices
  • 1 pound of Brussels sprouts, trimmed and halved if large
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 tablespoon brown sugar
