Salmon and Couscous Salad
Ingredients
  • ¼ medium cucumber
  • 100g low-fat plain yoghurt
  • lemon, juiced, to taste
  • ¼ garlic clove, crushed
  • ¼ tsp fresh dill, finely chopped
  • salt, to taste
  • ground black pepper, to taste
  • 150ml water
  • 30g pearl couscous, equiv. to 90g cooked
  • 90g salmon fillet, equiv. to 70g cooked
  • ½ medium tomato, sliced
  • ½ medium cucumber, sliced
  • ¼ medium yellow capsicum, diced
  • ½ spring onion, sliced
  • ½ medium mango, diced
  • 10g sultanas
  • 2 tsp pine nuts
  • ⅔ Tbsp fresh parsley, chopped
  • 1 large handful baby spinach leaves
  • lemon, sliced into wedges
