Vegan Chili with Avocado Crema
Ingredients
  • 1 14-oz can black beans
  • 1 14-oz can pinto beans
  • 1 tbsp vegetable oil
  • 2 leeks (green and white parts chopped. Can use an onion instead.)
  • 4 cloves garlic (minced)
  • 1 large carrot (diced)
  • 1 large green bell pepper (diced)
  • 1 cup corn kernels
  • 1 14.5 oz can fire roasted tomatoes
  • 2 tsp cumin (powdered)
  • 1 tsp smoked paprika
  • 2 tsp oregano
  • 1 tsp thyme
  • 2 to 3 cups vegetable stock
  • Salt and ground black pepper to taste
  • subheading: For avocado crema:
  • 2 ripe avocados
  • ½ jalapeno pepper (deseeded and minced)
  • 1 tbsp cilantro (chopped)
  • Salt to taste
  • Juice of 1 lime
