Sweet and Sour Cashew Stir-Fry
Ingredients

  • 1 tbsp. Sriracha

  • 5 large cloves garlic, halved
  • 1" piece ginger, peeled and thinly slivered
  • 1 small red onion, sliced into wedges
  • 2 bell peppers, thinly sliced
  • ¾ c. fried tofu puffs (optional)
  • 2 tbsp. low-sodium soy sauce
  • 2 tbsp. rice wine vinegar
  • 1 tbsp. Sriracha
  • 2 tbsp. packed brown sugar
  • ½ tsp. freshly ground black pepper
  • 2 green onions, thinly sliced, plus more for garnish
  • 1 to 2 tbsp. water, as needed
  • 1 tsp. toasted sesame oil
