Dairy-Free Green Bean Casserole
Ingredients
  • 2 pounds of fresh green beans
  • 3 cups of vegetable broth (or equivalent amount of vegetable bouillon and water), divided
  • ½ cup of raw cashews
  • ¼ teaspoon of salt
  • ½ teaspoon of ground black pepper
  • ½ cup vegan butter
  • 1 small onion diced
  • 2 cups of button mushrooms sliced or dicced
  • 4 medium cloves of garlic roughly chopped
  • ½ cup of all-purpose flour
  • 2 cups of crispy fried onions (we use store-bought)
