Ingredients
  • 1 pound great white northern beans, picked over, rinsed and soaked overnight
  • 8 ounces bacon, cut into 1 inch pieces
  • 1 cup onion, diced
  • 1 cup celery, diced
  • 1 cup carrot, diced
  • 3 cloves garlic, chopped
  • 1 pinch red pepper flakes (optional)
  • 6 cups chicken broth (or vegetable broth)
  • 1 teaspoon thyme, chopped (or ½ teaspoon dried thyme)
  • 2 bay leaves
  • ¼ cup parmigiano reggiano (parmesan cheese), grated (optional)
  • salt and pepper to taste
  • 1 tablespoon parsley, chopped (optional)
