Southwest Stuffed Sweet Potatoes
Ingredients
  • 4 medium sweet potatoes (washed, bruised portions peeled, otherwise leave skin on)
  • subheading: Bean and Corn Medley:
  • 1 ½ cups black beans (home cooked or BPA-free canned)
  • 1 cup organic corn (frozen and thawed or BPA-free canned)
  • 1 cup organic bell pepper, seeded and diced (red, orange, yellow, or green)
  • 1 cup red onion (diced)
  • 1 avocado (seed removed and diced)
  • ½ cup organic jalapeño (optional) seeded and diced
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • ½ tsp smoked paprika (or sweet paprika)
  • ¼ tsp salt (optional)
  • 3 tbsp lime juice (freshly squeezed) +1 Tbsp as desired
  • ½ cup cilantro (optional) chopped
