Quirky Cooking Grain Free Anzac Slice

  1. {Recipe} Mmmm, I found this recipe I made up last year for an 'Anzac biscuit-ish' slice, so of course we had to make it today - so yummy with a cuppa! Here it is if you'd like an easy grain free, egg free slice, with the option of dairy free too! :)
  2. 170g blanched almond meal
  3. 50 to 70g coconut sugar or honey, to taste
  4. 100g macadamia or cashew pieces
  5. 70g desiccated coconut
  6. ⅛ tsp fine sea salt
  7. ½ tsp bicarb soda
  8. 140g melted butter or 120g coconut oil
  9. Mix dry ingredients 10 sec/speed 3.
  10. Add butter/oil and mix 15 sec/rev/speed 4.
  11. Tip into large rectangular dish (lined) and press in firmly to fill dish evenly.
  12. Bake approx 15 mins at 170C, or until lightly browned.
  13. Cool before serving. Store in fridge to keep firm and chewy.
  14. Note: If you want to mill raw almonds you can, but it will be a coarser texture than blanched almond meal, and may crumble a little bit. Still good though!
