Red Rice
Ingredients
  • vegetable oil
  • ½ can tomatoes with juice
  • ½ large onion
  • 2 garlic cloves
  • ½ cup chopped carrots
  • 1.9 cup water or chicken stock
  • 1½ cup long grain rice
  • Salt and Pepper to taste
  • ½1 cup green peas (optional)
Steps
  1. 1. Wash rice and soak while cooking aromatics.
  2. 1. Brown the onions for five mins
  3. 2. Add more oil and fry the rice till it's golden, about 5 mins over medium heat, use as little oil as possible. Add the garlic and chopped carrots.
  4. 3. Add water then heat till boiling. Put in 350F oven for 55 mins. Or cook over medium heat on stove. Stir middle of bake, stir in green peas afterwards.
Notes
  • Next time, try not frying the rice, just cook for 1 min
