Simple Potato Salad
Ingredients
  • 4 to 6 Large Potatoes
  • 2 Eggs
  • ¼ cup Dill relish
  • ½ Cup Mayonnaise
  • 1 tsp yellow mustard
  • Salt, pepper and a little onion powder
Steps
  1. Cup potatoes into bite sized pieces, add to large pot and cover with water, add 2 whole eggs to the pot with the potatoes so they can boil at the same time. Salt the water and bring to a boil. Cook for about 10 minutes or until potatoes are fork tender. Drain and rinse with cold water. Allow to cool completely before assembling. In a large bowl, combine potatoes, mayo, mustard, dill relish. Stir gently so you don't smash the potatoes. Peel and chop the egg and mix into mixture. Add salt, pepper and onion powder to taste. Chill
