Ingredients
  • 30g cashews (¼ cup), soaked in boiling water
  • 40g cannellini beans, drained and rinsed (approx ¼ cup)
  • ¼ cup water
  • 4 cm fresh red chili
  • ½ clove garlic
  • 6 large mint leaves
  • 1 tablespoon lemon juice
  • ¼ teaspoon salt
Steps
  1. Drain the nuts, then blend all ingredients together in a mini blender.
  2. Serve over salads or pasta.
Notes
  • I made a batch using 80g beans and no nuts but it was much thinner and the flavour wasn't as good. I added 30g nuts to that mixture and remixed. The result was a very thick mixture and the flavour was good, but probably not quite as good as the recipe above.
  • 2/4/23 Didnt have jalapeno so used 1/16 tsp chilli powder. Didntn have lemon juice sonused ¾ TBSP lime juice. No mint so used ⅛ tsp smoked paprika and garam masala.
