An amazingly healthy way to start or end a day

Ingredients
- 3 Sausage Links stripped of casings and minced
- 10 Eggs
- 1 Tbl Baking Powder
- 20 oz Frozen Chopped Spinach defrosted
- 8 oz Cream Cheese room temperature
- ¼ Greek Yogurt (may substitute milk)
- 1 can mushroom
- ½ onion diced
- 1 can diced tomatoes drained
Steps
- Spread small minced pieces of sausage in a single layer into a 13x9 pan. Place in oven and broil on high for 5 minutes. Remove from oven and pour off excess oil. Set aside.
- Break 10 eggs into your mixer bowl and baking powder. Mix on medium for 3 minutes.
- Meanwhile combine spinach, cream cheese, yogurt, mushrooms and onions together. Add a little milk if too chunky. You want a smooth mixture that will be easy to spread.
- Pour spinach mixture on top of sausage. Spread evenly.
- Pour tomatoes on top of spinach. Spread evenly.
- Pour eggs on top. And mix into all layers. Until eggs are barely seen.
- Cook at 400 degrees for 15 minutes. Turn off stove. Leave egg casserole in stove for another 15 minutes to set.
