An amazingly healthy way to start or end a day

Ingredients
  • 3 Sausage Links stripped of casings and minced
  • 10 Eggs
  • 1 Tbl Baking Powder
  • 20 oz Frozen Chopped Spinach defrosted
  • 8 oz Cream Cheese room temperature
  • ¼ Greek Yogurt (may substitute milk)
  • 1 can mushroom
  • ½ onion diced
  • 1 can diced tomatoes drained
Steps
  1. Spread small minced pieces of sausage in a single layer into a 13x9 pan.  Place in oven and broil on high for 5 minutes.  Remove from oven and pour off excess oil.  Set aside.
  2. Break 10 eggs into your mixer bowl and baking powder.  Mix on medium for 3 minutes.
  3. Meanwhile combine spinach, cream cheese, yogurt, mushrooms and onions together.  Add a little milk if too chunky.  You want a smooth mixture that will be easy to spread.
  4. Pour spinach mixture on top of sausage.  Spread evenly.
  5. Pour tomatoes on top of spinach. Spread evenly.
  6. Pour eggs on top.  And mix into all layers.  Until eggs are barely seen.
  7. Cook at 400 degrees for 15 minutes.  Turn off stove.  Leave egg casserole in stove for another 15 minutes to set.
