Zucchini Parmesan Waffle Bowl

Ingredients
- 2.5 cups shredded zucchini
- 1 large egg
- ¼ cup milk
- ½ cup grated parmesan cheese
- 2 T flour
- 1 T parsley
- Salt and pepper
Steps
- Plug in your mini waffle bowl maker to preheat
- Place shredded zucchini in colander (I use my salad spinner) and toss with ½ salt.
- Let sit for 30 minutes. Rinse and squeeze out excess water. (I just spin the salad spinner and remove zucchini).
- Dry on paper towel.
- In a medium sized bowl combine egg, milk, paremesan, and parsley. In a separate bowl combine flour, salt and pepper. Add flour mixture to egg mixture. Fold in zucchini.
- Add 3 T of mixture to the waffle bowl maker. Cook until browned 4 to 5 minutes. Pull out carefully with rubber tongs.
