Ingredients
  • 2.5 cups shredded zucchini
  • 1 large egg
  • ¼ cup milk
  • ½ cup grated parmesan cheese
  • 2 T flour
  • 1 T parsley
  • Salt and pepper
Steps
  1. Plug in your mini waffle bowl maker to preheat
  2. Place shredded zucchini in colander (I use my salad spinner) and toss with ½ salt.
  3. Let sit for 30 minutes. Rinse and squeeze out excess water. (I just spin the salad spinner and remove zucchini).
  4. Dry on paper towel.
  5. In a medium sized bowl combine egg, milk, paremesan, and parsley. In a separate bowl combine flour, salt and pepper. Add flour mixture to egg mixture. Fold in zucchini.
  6. Add 3 T of mixture to the waffle bowl maker. Cook until browned 4 to 5 minutes. Pull out carefully with rubber tongs.
