Grilled Portobello Salad with Avocado
Ingredients
  • 4 large portobello mushrooms
  • 2 Tablespoons olive oil
  • 2 Tablespoons soy sauce or GF Braggs
  • 2 Tablespoons balsamic vinegar
  • 1 Sweet onion
  • 1 Ear Corn
  • 1 pint cherry or grape tomatoes or heirloom tomatoes
  • 1 avocado
  • handful cilantro- chopped
  • 4 ounces arugula or favorite green
  • crumbled cheese ( queso fresco, goat, feta) optional but not necessary
  • subheading: Dressing:
  • ⅛ cup olive oil
  • 1 tablespoon lime zest
  • 1 tablespoon lime juice
  • ½ teaspoon cumin
  • ½ teaspoon coriander
  • ½ teaspoon smoked paprika
  • ¼ teaspoon salt and pepper ( more to taste)
  • 2 teaspoons maple syrup ( or honey or agave)
  • a pinch of cayenne or chipotle powder ( or chili powder)
