Broccoli & Bacon Muffin Tin Frittatas

Ingredients
  • 2 cups Broccoli Florets, cooked until crisp tender
  • 3 bacon slices,cooked & crumbled
  • 8 large eggs
  • ¼ cup milk
  • ½ tsp salt
  • ½ tsp pepper
  • ½ cup sharp cheddar cheese, shredded
Steps
  1. Preheat oven to 350
  2. Coat a 12 cup muffin tin with cooking spray.  Divide brocolli & bacon among muffin cups.
  3. Crack eggs into large bowl.  Add milk, salt & pepper.  Stir with whisk until well blended.  Divide egg mixture evenly among muffin cups.  Sprinkle cheese over tops. Bake at 250 for 18 min or until just set.  Cool on wire rack for 2 to 3 min.  Carefully run a knife around edges to loosen.
