Vegan Stuffed Shells with Garden Vegetable Filling (Dairy-Free)
Ingredients

  • ½ batch cashew mozzarella (can be prepared in advance)
  • hemp parmesan (optional, for serving)
  • thinly-sliced fresh basil (optional, for serving)

  • ½ batch almond ricotta (1.5 cups) (can be prepared in advance)
  • 3 tbsp chickpea flour (optional but recommended)
  • 1 tbsp olive oil
  • 1 shallot diced
  • 1 zucchini diced
  • 1 yellow squash diced
  • 1 red bell pepper diced
  • salt and pepper, to taste
  • 2 tbsp chopped fresh thyme, oregano, parsley, or basil, or a mixture
