Pasta Bow Salad
Ingredients
  • Vinaigrette (¼ c)
  • ¼ tsp Dijon
  • ½ tsp salt SUBSTITUTE Penzey spice mix of choice
  • 2 ½ tsp white wine vinegar
  • Freshly ground black pepper
  • 3 tablespoon olive oil
  •  
  • 1 garlic clove
  • 3 c pasta bows
  • 1 red pepper - deseeded and chopped
  • ½ c black olives - sliced
  • ½ cucumber - washed, deseeded and chopped
  • 1 c edamame
  • 1 c Gloucester - cubed
Steps
  1. Rub inside bottom and sides of bowl with garlic clove; then set bowl aside.
  2. Cook pasta al dente. Steam the soy beans.
  3. Thoroughly drain pasta and put into prepared bowl.
  4. Add vinaigrette, red pepper, edamame, cucumber, and olives. Mix well.
  5. Allow pasta to cool to room temp.
  6. Add cheese and mix well.
  7. Optional - garnish with basil leaves.
