Ingredients
  • subheading: For the loaded smashed potatoes:
  • 24 oz yellow baby potatoes or other small, thin-skinned potatoes
  • 1 tbsp olive oil
  • salt and pepper to taste
  • cashew cream (recipe below)
  • 3 strips rice paper bacon crumbled into small pieces
  • 2 to 3 green onions or scallions both green and white parts, thinly sliced (or use 1 bunch of chopped chives)
  • subheading: For the cashew cream (makes extra):
  • 1 and ½ cup raw cashews soaked for 8 hours and drained
  • ¾ cup water
  • 2 and ½ tbsp freshly-squeezed lemon juice
  • ½ tsp salt scant
  • 1 to 2 tbsp plain, unsweetened nondairy yogurt optional
