Ingredients
  • One package of instant cheese biscuit mix
  • ½ cup to ¾ cup shredded sharp cheddar (or whatever flavor you want), and a little extra for sprinkling on the top
  • ½ cup and 1 to 3 additional Tbsps water
  • 2 Tbsps butter
  • ½ tsp garlic powder
  • ½ tsp parsley (optional)
  • Old Bay to taste
Steps
  1. Heat oven to 425, not 450.
  2. Mix the biscuit mix and shredded cheese until well blended, then add the ½ cup water and mix.
  3. Depending on what kind of shredded cheese you use, your consistency will vary at this stage. If too dry, add a tablespoon of water to the mix, stir, and check your consistency. If still too dry, add another tablespoon of water and repeat. If mixture becomes gummy and shiny, you’ve added too much water! This could result in underdone dough in the middle. Stop when mixture still looks kind of dry and floury.
  4. Follow the rest of the directions on the package. You should have six biscuits. Flatten them out a little so they are a bit more even in thickness.
  5. Melt the butter in a small dish. When melted, add desired amount of garlic powder and blend. Add parsley at this point to, if you want. Brush biscuits with about half of the butter mixture. Put biscuits in the oven.
  6. Remove biscuits from oven at about 9 to 10 minutes, just before they start to brown. Brush the rest of the melted butter over each biscuit evenly, sprinkle about ½ Tbspshredded cheddar over each, and place back in oven 1 to 2 minutes or until lightly browned.
Notes
  • I’ve been using Bisquick, but I’m sure any packed mix would do.
  • Make sure you use the regular cut of shredded cheese, not fine or “fancy”.
  • About ½ tsp garlic powder is a good amount for the melted butter. Don’t let the melted butter get too hot, or the garlic powder will turn into mush.
  • I’d like to try adding a dash of Old Bay. I’d also like to try a combo of finely crumbled blue cheese and sharp cheddar.
  • I’ve been fiddling with this recipe, trying to get it just right, when I realize there’s people out there who are doing this with boxed Bisquick biscuit/pancake mix. I’d better look at their stuff.
